• Manage, promote and implement best practices of the Company with regard to Health & Safety / Food Safety in the catering department. • Provide inductions and skill training to service and cleaning staff in conjunction with the training department. • Develop and manage the catering department staff for quality output & performance. This includes the following areas, staff presentation, hygiene, health and safety & food safety implementation levels. • Carry out Department audits. Report and record all near misses, injuries and job related non-conformances as required. • Perform and record daily duties as per Catering Manager Rotation Workbook. Work supervision & delegation of duties. Menu and Recipe Development. • Department daily costing control. • Departmental human resources duties including but not limited to staff recruitment; counselling; and discipline.
